
Hello, friends! I’m a little late with this, but here I am with a new post! A pretty simple one today, but I wanted to share some recipes that I’ve been enjoying lately.
Vegetarian Mexican Casserole This casserole dish paired with tortilla chips and some avocado slices is to die for! It’s also great as leftovers!
Chicken and Stuffing Bake This is one of those dishes that is great to make during a busy week, because it produces the BEST leftovers. It’s one of those meals that only gets more delicious each time you heat it up.
Cheeseburger Soup I’ve made this recipe a couple of times and tweaked it here and there, the biggest change being that I omitted the carrots the second time.
Chicken Parmesan I may be be in the minority with this one, but I had never tried chicken parmesan prior to testing this recipe out. And oh my goodness, is it DELICIOUS. No tweaks were needed for this recipe – we paired it with a yummy salad and we were good to go! We ended up eating this a couple times a week and did not get sick of it at all! Recommend this recipe highly!
Pesto Grilled Cheese I ended up tweaking this one a little bit, but this is such a delicious sandwich. I used store-bought pesto, added a tomato slice, and chose to add some Swiss cheese. DELICIOUS.
