Hello, friends! Happy Wednesday to you all! Today is a gloomy day in my small town, but, April showers bring May flowers, so I am content. Since becoming a stay at home mom, I’ve had so much extra time to be in the kitchen, making things from scratch. Some things there’s honestly not much difference and it doesn’t quite feel worth it to make homemade, but this granola is SO worth it. I found it on Pinterest and I’ll share the link here. I’ve been loving making yogurt bowls for breakfast, it’s such an easy way to have a balanced breakfast that is still delicious.
For this yogurt bowl, I did:
- 1 cup plain greek yogurt
- Handful of strawberries
- 1 tablespoon of chia seeds
- 1/4 cup homemade granola
I love plain greek yogurt because it allows the granola to shine, in addition to that, if you buy plain greek yogurt, you also are able to use it for more savory meals as well. (I love using it as a replacement for sour cream and to make a high protein ranch dip with a small amount of ranch seasoning. So good!) You could use any kind of berries that you want, but my absolute favorite are strawberries. And chia seeds!!! They have so many great nutrients and add such a great crunch. And last but not least, the granola! It is so tasty and takes very little prep time.
And that’s that, friends! Have a great day!
XOXO,
Mattie Mae
